I found a Mexican Pizza kit at the store a couple of weeks ago and made them last Friday night for dinner. I didn't have any ground beef, so we just did it vegetarian style- just refried beans. I have been feeling burnt out lately with the kids, so I wanted to make an extra effort to keep them busy and include them in making dinner. They really enjoyed themselves! I let them use the butter knives to cut some black olives. They were especially happy about that. My kids love black olives. They love to put them on their fingers and call them 'boo-boo's. Joel said he never did that when he was a kid. How sad. :( Anyway. When I wasn't looking Chloe put the whole bowl of olives on her pizza. What an artist. We baked them for a few minutes- to warm them up and then topped with lettuce and tomato. They were actually very good. I just love anything mexican though! It turned out to be a very kid friendly activity!
