I have been wanting to post my mom's recipe for Apple Pancakes with Cider Syrup. It just didn't seem right during the almost 90 degree temp. It looks like fall may finally be arriving and maybe you can try out this family fall favorite! Mmmm.
Apple Pancakes
2 C bisquick (I use Aldi brand)
1 tsp cinnamon
1 egg
1 1/3 C milk
3/4 cup grated apple
Cider Syrup
1 cup sugar
2 tbs cornstarch
1/2 tsp pumpkin pie spice
2 cups apple cider
2 tbs lemon juice
1/4 cup margarine
Mix everything except margarine in a microwave safe bowl. Microwave until thick and boils about 1 min. (careful, it may boil over) Remove from microwave and add margarine.
Notes: You will probably have to at least double the pancake recipe if there are more than 4 people in your family. You probably won't need to butter your pancakes with all the butter in the syrup! Boy, is it good though! :)
